Who is in pain, and how much?
Someone follows a recipe, the cake sinks or the crumb is wet, and all they hold is one photo and a sentence about what they did. The knowledge exists in abundance — the Chinese top answers are 2651-, 3476- and 2516-like general checklists on why chiffon collapses — but a general checklist cannot reach the layer that decides the answer: the machine on their counter. In the Chinese thread the crowd's conclusion is literally 'stop trying, buy a second oven'. The cost is counted in ingredients, not dollars: 真是心疼我的鸡蛋.
What is missing today?
Both sides have institutionalised the missing input rather than filled it. r/Sourdough made 'Include recipe - no low effort posts' rule six, i.e. the community forces you to supply the process because diagnosis is impossible without it — and then leaves the diagnosis to whoever wanders by. The wandering is the second half of the gap: on the top-voted 'What went wrong?' thread in r/Baking (3461 points / 513 comments) the number-one comment with 5738 points is a joke about hiding valuables in the hole, and the real answer about degassing and shaping sits underneath it. Recipe apps generate recipes; nobody reads a wreck.
What would kill it?
Diagnosis from one photo plus self-reported process is genuinely hard and a confident wrong answer wastes another batch, which is exactly the trust this person has already lost. Frequency is real but seasonal, and the category is adjacent to a graveyard of recipe apps with no retention. The honest scope is narrow — one pastry family, one failure mode — and anything wider reads as another AI chef.
What would you do differently?
One category only: chiffon and castella, the two that fail most. Input is a cross-section photo, the recipe as written, the actual machine (steam-combi, convection, deck, rice cooker) and three yes/no questions. Output is not an explanation but a rewritten recipe with the numbers changed — upper/lower heat 160/140, do not open before minute 28, stop whipping at this stage — with every line that is specific to that machine flagged as such. No community, no logging.
