Mooncakes sell for only two months a year, yet they've become a 28.2 billion yuan business
Being bound to Mid-Autumn Festival actually traps mooncakes' selling window, but the 28.2 billion yuan scale comes from the gifting occasion and flexible custom production lines, not from flavor innovation.

Zongzi can sell year-round, mooncakes cannot
Zongzi is tied to Dragon Boat Festival, but once vacuum-sealed for long shelf life it can sell all year round, and Wufangzhai (五芳斋) even opened restaurants to put zongzi into everyday settings. Mooncakes' problem is not that the craft can't achieve long shelf life, but that it is defined as a ‘traditional festival pastry mainly eaten during Mid-Autumn Festival’, and the national standard GB19855 writes the season directly into the definition. So of two festival foods, zongzi can decouple from its festival through shelf life and channels, while mooncakes cannot.

Lotus seed paste mooncakes must contain no less than 60% lotus seeds, fruit mooncakes must contain no less than 25% fruit products, and five-kernel mooncakes must use the five kernels: walnut, almond, olive kernel, melon seed, and sesame. The purpose of this line is to push up ingredient costs and prevent cheap candied winter melon, green and red shreds, and inferior nuts from being used as filler. For consumers, reading the order of the ingredient list is enough to judge how much of what is actually in there.

Custard lava mooncakes are small not out of stinginess but because of structure. Outside is flaky pastry, in the middle is a custard layer, and at the very center is the lava layer, with the custard layer acting as a moisture barrier. Production requires two rounds of baking to keep the lava semi-solid, and the lava's melting point must be designed — solid during transport, turning to flowing liquid only after a few seconds in the microwave. If heated too much, the lava is absorbed dry by the pastry and it reverts to an ordinary custard mooncake.

Not everything can be stuffed into a mooncake. First is water content — hot and sour soup mooncakes can't be made because there's too much water to contain; second is safety — meat, egg, and dairy are also loved by microbes, so processing temperature and sterilization processes must be tested repeatedly; third is particle size — too large and the pastry can't hold it, too fine and you can't taste it; fourth is flavor retention after high-temperature baking — some aromas simply disappear once baked; fifth is whether the cost can be handled. So long-term stable flavors are ones confirmed by generation after generation.

When big brands make branded mooncakes through OEMs, there's a common misconception: you must choose the best OEM in the country. But the top OEMs' production scale actually doesn't match yours. Indicators you can screen on include registered capital, tax payment records, number of employees with social insurance contributions, and accumulated days of safe production. Also, the nine major regional styles correspond to different factories — you can't ask Guangzhou Restaurant (广州酒家) to produce Shanxi egg-skin mooncakes; they don't have that capability or production line.

Mooncake production is semi-automated and semi-manual — wrapping and forming machines can do their part, but brushing egg wash, pressing patterns, and stamping require human hands, which actually makes it favorable for OEM and customization. Flexible factories can go as small as a few hundred boxes, and can do thousands or tens of thousands of boxes too. If a company has only 50 employees, it can directly use the factory's existing mooncakes and only needs to design the gift box. This small-batch, fast-response capability is the core of why mooncakes can be a corporate customization business.

In 2025 China's mooncake output was 518,000 tons and sales scale was 28.2 billion RMB, both down from the previous year. At 80 grams each that's about 6.4 billion pieces, at 100 grams about 5.18 billion pieces, and across a population of 1.4 billion that's an average of three to four per person. For comparison, Dragon Boat Festival zongzi annual sales scale is about 10 to 11 billion, and instant noodles about 68 to 120 billion. That mooncakes can do 28.2 billion selling only two months a year comes down to the gifting attribute — brands prepare large amounts of PR gifts at the two nodes of Chinese New Year and Mid-Autumn Festival, and zongzi's gifting attribute is far weaker than mooncakes'.

In 2022 the National Development and Reform Commission and three other departments jointly issued an announcement placing boxed mooncakes priced above 500 yuan per unit under key supervision. So the highest mooncake price on the market is 499. The calculation logic: a box of mooncakes costs about 70 yuan per box, and adding channel commissions and allocated expenses, it cannot exceed 500 yuan. Back when the economy was good there were sky-high mooncakes with very expensive tea or liquor inside, even wooden gift boxes, with both cost and price very high.

The food industry has had an obvious trend these past two years called mini package, making packaging smaller. On one hand it can be finished in one sitting after opening; on the other, consumers just want a quick treat and don't want to eat that much, and small packaging also lets them buy many flavors at once. Mooncakes are moving in this direction too, because it's hard for one person to finish a whole mooncake, and it's usually cut into several pieces to share. Made smaller, one person can at least finish one, and it also reduces waste.

Brands launch five new flavors each year to see which gets eliminated, but a flavor having no repeat purchase doesn't necessarily mean consumers don't like it — it may simply never have reached consumers. Because most mooncakes are gifts, constantly being regifted and passed along, and the recipient never eats it before passing it on. So next year they won't want to buy that flavor either, because this year they never got to taste it. The advantage of brands with physical stores is that they can do tastings, letting consumers try before deciding.
